The grapes were destemmed and foot-trodden, pressed after 24 hours, and finished fermenting off the skins in used French oak barrels, where the wine matured for a year.\u003c\/p\u003e\n\u003cp\u003eThis is the palest of them all and my favourite of the reds, with a more delicate, elegant, floral and perfumed profile. It has 12.8% alcohol, a pH of 3.43, a light to medium body, very fine tannins and clean, long, savoury flavours. 1,100 bottles produced.
