Then, upon arrival at the winery reception, a selection is made on the selection tables to keep the bunches in optimal health and maturation conditions.\u003c\/p\u003e\n\n\u003cp style=\"text-align: left;\" data-mce-fragment=\"1\"\u003e The must is transferred to French oak barrels where alcoholic fermentation takes place, and from there to new barrels (with 10% American oak) for malolactic fermentation. It then ages in barrels for around 20 months, with racking every 4-5 months.
