On the nose it is very powerful, dominated by aromas of pastry fruit, stewed apricot, with clear notes of sugared almonds. Slight notes of pepper and anise. In the mouth, the sensation is very broad and long, with a remaining pastry sensation, ending with a spicy note.

This family domain is located in the village of Aÿ in the Grande Vallée de la Marne with vineyards planted in white chalk soil with belemnite fossils or in limestone and sedimentary soils. Most vineyards are listed as 100% Grand Cru. In the vineyard, the methods used are faithful to the Champagne tradition, using modern techniques to improve quality. The minimal intervention approach allows soils to fully express their potential.

The minimum intervention philosophy is applied at all times, allowing soils to express their full potential. In the vineyards, the soils are very careful and in several plots grass is planted between the rows, which helps to reduce the use of chemical herbicides. Implementing a gentler approach to viticulture, requiring fewer fertilizers and chemicals, as well as green harvesting on some delicate plots, gives them better control of production.

The hand-harvested grapes are taken to the winery in Ay where they are gently pressed before cold fermentation. The reserve wine, which makes up around a fifth of the final batch, was aged on its lees in large oak “Foudres” to add richness and complexity for 15 to 18 months.
