Description
Château d'Yquem is the only Premier Cru Supérieur of the 1855 classification and the most famous sweet wine in the world. It is made in Sauternes from Sémillon and Sauvignon Blanc affected by noble rot, picked berry by berry over several passes through the vineyard. This 2015 vintage is a bottle of enormous prestige, able to age for generations.
In the glass it is bright gold, with a nose of apricot, candied orange peel, honey, saffron and white flowers. The palate is unctuous yet fresh, with lively acidity balancing the sweetness and a very long finish.
Serve at 10–12 °C with foie gras, Roquefort, nut tart or citrus desserts. Its ageing potential is remarkable and it will keep gaining complexity for decades.
