Wine profile
Body
This wine: 4 out of 5 — closer to «full».
How heavy and full the wine feels in your mouth — from light like skimmed milk to rich like cream. It comes mainly from alcohol, extract and, in sweet wines, sugar.
Wine profile
Tannin
This wine: 3 out of 5 — right in the middle.
Tannins come from grape skins, seeds and oak. You feel them as a pleasant drying grip on gums and tongue — from silky and velvety to firm and chewy.
Wine profile
Acidity
This wine: 3 out of 5 — right in the middle.
The freshness that makes your mouth water, like a squeeze of lemon. It gives a wine tension, length and ageing potential, and makes it great with food.
Wine profile
Alcohol
This wine: 4 out of 5 — closer to «high» (14% vol.).
Alcohol brings warmth and body. Still wines usually sit between about 11% and 15% ABV, while fortified wines such as Port sit around 19–20%.
Wine profile
Sweetness
This wine: 1 out of 5 — closer to «dry».
The residual sugar you can taste. EU label guide for still wines: dry up to ~4 g/L, medium-dry up to ~12 g/L, medium-sweet up to ~45 g/L, sweet above that.

Tasted shortly before bottling, so a sample of the final blend, the 2023 PSI is juicy, ripe and approachable. It's a little showier and more intense, despite similar alcohol to the bottled 2022 (perhaps slightly higher, but under 14%), and seems a little riper, with notes of peach and some decaying flowers. It has abundant tannins and seems to need a little more time in bottle. That's usually the case with PSI: the tannins need time. They resolve relatively quickly, but it still requires a bit of patience. It was due to be bottled in May 2025.
Tim Atkin:
Peter Sisseck sources this large blend, Tempranillo with 10% Garnacha, from 700 plots, mostly in the eastern part of the appellation, working with 200 growers, two co-ops and 90 hectares of his own vines. Fresh, vibrant and full of energy, the focus here is on fruit intensity and minerality rather than oak, with notes of mountain herbs, flavours of raspberry, plum and redcurrant, and fine, elegant tannins. 2026–32.
