By having the two varieties that make up the batch fermented together, this promoted a greater integration of their particular qualities. One of the varieties is known for its chromatic and aromatic intensity, the other, quite the opposite, is known for its discreet color and restrained and austere aromas, giving rise to a wine with the best of both worlds. The aromatic exuberance of one, with its shades of red and black fruits, appears tempered by the fineness and freshness of the other variety, with its soft aromas, which highlight black cherry and dark chocolate, pepper and a refreshing minerality. Elegance and harmony are two striking characteristics, which appear evident in the mouth, where the freshness and quality of the soft tannins contribute to a whole, admittedly clandestine in this region, but owing to its identity!
