TASTE HISTORY WITH PORTO'S OLDEST WINE HOUSE
Every wine tells a story. Kopke's Colheitas, however, tell a unique story. Tasting a wine is tasting history, and in the case of this 1975 Colheitas, it means remembering a landmark event like the founding of Microsoft by Bill Gates and Paul Allen on April 4, 1975.
WINEMAKING
Hand-harvested at the ideal moment of ripeness. The grapes are destemmed, crushed, and transformed into wine through a process of careful maceration to extract color, tannins, and aromas, intensified by frequent pumping over during fermentation. This process takes place in vats (lagares) at a controlled temperature (between 28-30°C) until the desired level of sweetness (baumé) is achieved. At this point, wine brandy is added to create the final fortified wine. A high-quality wine made from a single harvest. Colheita wine ages in oak barrels for varying periods, but never less than 7 years. It is then bottled and sold according to market demand.
TASTING NOTES
Attractive amber color. Rich and fragrant nose, with predominant aromas of dried fruits elegantly wrapped in spicy notes. On the palate, it is smooth and silky, revealing remarkable structure and body. A delicate wine, defined by an elegance that lingers on a lingering finish.
RECOMMENDATIONS
Served chilled, it reveals all its finesse and sophistication, especially when paired with desserts based on caramel, dried fruits, and spices, such as caramel fondant with apple and ginger jelly, tarte tatin, crème brûlée, and medium-hard cheeses. It should be served between 12 and 14°C.
