Castro Ventosa is one of the oldest estates in Bierzo. It is the family property of Spain’s most famous winemaker, Raúl Pérez. La Cova de la Raposa is a vineyard located in the village of Abajo de Valtuille. It has a southern exposure and sandy soil. It is not an easy plot, so this wine is not produced every year. When it does happen, the wine is magnificent.
Winemaking: The first harvest on the farm. The vineyard is organically cultivated. Vinification is carried out in 2 old open barrels with full bunches where only native yeasts are used. Long maceration of 60 days and aging of 12 months in 500L of French oak (not new).
Taste analysis: This wine stands out for its bouquet, which is already very open, with fresh aromas of raspberry, blackcurrant and green herbs. Also on the palate, very elegant, we can distinguish an Atlantic profile, with a lot of juiciness and energy.
Maintain aging potential of 10-15 years.
