The winery controls more than 100 hectares of old vines daily with old clones of Tinto Fino (Tempranillo grape variety that adapts over two years to the physical and climatic conditions of the Ribera del Duero) distributed in 7 different municipalities in the province of Burgos, and 20 hectares of young fine red vineyards located in 2 municipalities in the province of Valladolid. They all belong to the Ribera del Duero designation of origin and the age of the vines varies between 40 and 100 years.

The grapes from each of the two municipalities are treated independently: they are harvested separately and this separation is maintained during the winemaking process and also during aging in barrels.

Mariano GarcĂ­a, as winemaker at Aalto, decides when to make a blend of every two batches and when he considers it to have reached its ideal level of aging. Later, I would batch all the wines to drink the entire harvest at once. A curious title, Aalto wines are not clarified or filtered to preserve all their original characteristics.

In May 2018, it was published after Javier Zaccagnini left the Aalto project to dedicate himself exclusively to his personal project, also developed in Ribera del Duero.
