White Yesterday Concept 2020

This wine comes from an ancient and forgotten undefined region, south of the border with the Douro. Old vines (80 to 100 years old), high altitude (700m), granite soils, mix of several white and red varieties. Grapes harvested manually into small boxes, with perfect ripeness. The bunches were placed whole in a stainless steel vat. Fermentation began inside the grapes, and only then were the masses pressed and fermentation ended. Most of the wine aged in stainless steel tanks, only 20% was aged for 10 months in used barrels.
