Sidónio de Sousa is one of the great wine producers in the Bairrada region. Renowned for having some of the oldest and best Baga da Bairrada vineyards, he continues to make his wine in a traditional way, resulting in juicy, exquisite wines with good fruit and aged in old Portuguese oak, a rare find these days, even in Portugal.
Crushing without destemming, with cooling of the grapes in the winery in small open vats, where skin maceration begins and then fermentation, without the addition of enzymes or yeasts. The grapes are crushed manually using wooden pulp to increase the extraction of the Baga grape's vinous characteristics. After fermentation in small open vats, the wine is transferred to cement vats and stainless steel tanks, where it rests until December, when it is filtered and transferred to 4,000-litre national oak barrels aged for 12 months. With a highly concentrated garnet colour and intense aroma of the grape variety. In the mouth, it is a classic Baga, with well-defined acidity and tannins, but rounded off by the 8-year ageing, maintaining its freshness and intensity of taste.
