Pascal Doquet's Champagne Brut "Horizon" is made exclusively from 100% Chardonnay grapes, grown in the Cote de Blanc, the most suitable area for white grapes. It is a Blanc de Blancs label with a fresh and refined profile. It is released onto the market after a minimum ageing on the lees of 36 months, which gives the Chardonnay precious evolutionary notes capable of enriching its characteristic floral and fruity bouquet.
Visual: In the glass, it displays a bright straw-yellow hue, with a fine and persistent perlage, which highlights its elegance and vivacity.
Aromas: The nose is intense and complex, with an expressive floral bouquet and notes of ripe yellow fruits, vibrant citrus and an intriguing iodine touch, which refers to the characteristic minerality of the terroir.
Palate: On the palate, it is tense and vibrant, with a sharp and perfectly balanced acidity. The fruity flavors intertwine with nuances of brioche and dried fruits, acquired through long contact with the lees. The finish is long, marked by a captivating freshness and a sophistication that persists on the palate.
Pairing: Ideal with oysters, fresh seafood, goat cheese and delicate fish dishes.
Conclusion: Pascal Doquet Brut Blanc de Blancs "Horizon" is a refined Champagne with a great personality, masterfully reflecting the terroir of the Côte des Blancs. Its balance between freshness, structure and complexity makes it an excellent choice for both celebratory moments and to accompany sophisticated gastronomic experiences.
Pascal Doquet, a winegrower since 1982, created his own label in 2004, years after taking over his family’s vineyards. His 8.7-hectare estate in the Côte des Blancs and Coteaux Vitryats, including vineyards in Vertus and Le Mesnil-sur-Oger that are over 40 years old on average, has been organically farmed since 2006 and certified organic since 2010. Pascal avoids plowing, and mechanical maintenance is only carried out on the soil surface, promoting soil life throughout the year, with various plants seeding themselves naturally. Fermented with native yeasts and vinified with low levels of sulphites, his wines are matured for six months on the lees in enamelled steel tanks and old oak barrels. The range, dominated by blanc de blancs and highlighting different terroirs, offers expressive wines with immediate charm.
