The 2016 Cabernet Sauvignon has a deep garnet-purple color. Its aroma begins a little reserved, slowly revealing a restrained intensity of crushed fresh blackberries, chocolate-covered cherries, cassis and anise, with enveloping nuances of black tea, cigar box, truffles and charcuterie. With more time, soft notes of red roses and crushed stones emerge.
On the palate, medium to full-bodied, it is simply captivating, offering a multitude of floral and earthy touches amidst a core of black fruits, with firm, integrated and extremely fine tannins. A well-balanced acidity reveals layer after layer of delicate 'nuances' until a very long finish, with mineral touches.
The Eisele Vineyard team, led by Frédéric Engerer (of Château Latour) and under the expert direction of winemaker Hélène Mingot, exceeded all expectations this vintage with a singular expression that honours the heritage of the terroir and reveals dimensions yet unexplored.
