Description
This organic 100% Chardonnay Blanc de Blancs is a true expression of refinement and character. It has a pale, bright and elegant yellow colour. Its mousse is abundant, giving a creamy, sophisticated texture.
AromaOn the nose it reveals a captivating scent of puff pastry and toast, complemented by notes of baked pear and caramelised apple.
On the palate it's extremely clean and refreshing, with impeccable balance between freshness and sweetness. The residual sugar is well judged, giving harmony and elegance. The finish is medium and persistent, bringing fruity ‘nuances’ of apple and subtle minerality.
Versatile and food-friendly, this Champagne is a secret weapon for both sophisticated dishes and rich desserts.
Pascal Doquet, a grower since 1982, created his own label in 2004, years after taking over his family's vineyards. His 8.7 hectares in the Côte des Blancs and the Coteaux Vitryats, including vineyards in Vertus and Le Mesnil-sur-Oger averaging over 40 years old, have been farmed organically since 2006 and certified since 2010. Pascal avoids ploughing, and mechanical work is done only at the soil surface, encouraging soil life all year, with various plants self-seeding naturally. Fermented with native yeasts and vinified with low sulphites, his wines mature for six months on the lees in enamelled steel tanks and old oak barrels. The range, dominated by blanc de blancs and highlighting different terroirs, offers expressive wines with immediate charm.
