Description
Pittacum Aurea is a red made by Bodegas Pittacum in D.O. Bierzo.
It's a single-variety Mencía from grapes from a single estate, Finca Areixola. A vineyard over 100 years old that allows only manual work. It has never been compacted or pressed by heavy machinery.
Harvesting is entirely by hand, and the grapes go to the winery in small 12 kg crates, ensuring no unwanted breakage before they arrive.
The grapes pass over a sorting table where every bunch is selected. Once selected, the bunches are crushed without destemming.
Fermentation takes place in stainless steel tanks for 15 days at 28ºC, with punching down and light pumping over.
After fermentation, it macerates for 20 more days before racking and stays two more weeks in tank before going into new French oak barrels, where it matures for 14 months without racking.
It's then bottled and rests in bottle for two more years before release.
Pittacum Aurea is a wonderful wine showing a commitment to its surroundings, deeply connected to the terroir and climate in which it grows.
