Description
It comes from a strict selection of grapes from the estate's oldest vineyards, all over 35 years old: Vale Grande, Cabeço das Pulgas, Casa das Máquinas, Três Encostas and the west side of Viola. It is a blend of several varieties, usually 90% Touriga Nacional and Touriga Franca, with Tinta Barroca, Tinta Roriz and Tinto Cão making up the remaining 10%.
The grapes of each variety are picked and vinified separately. After crushing and destemming into granite lagares, they are trodden by foot. The musts are then run into vats, where fermentation takes eight days. After fermentation, part of the wine undergoes malolactic fermentation in barrels.
