Description
Gonet-Médeville's most emblematic Champagne and the favourite sparkling wine of growers Xavier Gonet and Julie Médeville. It's made from a blend of Chardonnay, Pinot noir and Meunier. This magnificent Champagne, aged for 24 months in the cellar, has fine, creamy bubbles, aromas of pastry and white fruit, and is fresh and very tasty on the palate. A food-friendly Champagne, ideal with all kinds of aperitifs and great meals.

AromaOn the nose the wine shows a complex, expressive bouquet marked by notes of freshly baked brioche, honey, yellow apple and dried citrus peel. On the palate it has an enveloping, somewhat “fleshy” texture, influenced by bottle ageing, with a medium- to full-bodied profile. Despite its structure, it keeps vibrant, taut acidity that gives great energy and precision.
The mousse is fine and elegant, adding to a sense of great sophistication. The finish is long, saline and strongly mineral, leaving a persistent savoury impression. The critic also highlights the choice not to do malolactic fermentation, which helps preserve the purity of fruit and the house's characteristic freshness.
