The age of the vines, on average 45 years, is decisive as a plot selection criterion, because each vine produces a good third less harvest compared to a younger vine. Hence a more pronounced aromatic potential and excellent maturity at harvest. The primary aromas are typical of Aÿ Pinot Noir: black currant, small red fruits, on the nose and in the mouth, with a spicy touch at the end of the tasting.

These aromas evolve during the second fermentation and to this day present predominantly juicy fruit: white peach, candied lemon. Despite a live attack in the mouth, this wine remains very round, vinous, straight and well structured, long in the mouth without weight. It is a purist wine for lovers of a single grape variety, as opposed to a champagne blend.
