Garnacha is the trendy variety. A variety that has always been rooted in Rioja as a subsidiary of Tempranillo and that in recent years we have discovered its unsuspected qualities by making it alone. This is Baigorri Garnacha, a red from the Qualified Designation of Origin Rioja Alavesa, from old vines with an average age of 65 years, located 750 meters above sea level with very poor iron-clay soils and located in the city of Samaniego. Sustainable viticulture in harmony with nature, with 100% manual work. The most attractive thing about this Garnacha is the freshness and finesse provided by the vineyards located almost on the edge of cultivation, very different from the portrayal of this more alcoholic variety and fleshy wines from the lowlands of La Rioja or Aragon.
Made with 100% Garnacha grapes, the grapes were selected manually, grain by grain, using selection and vibration tables. The grapes went through a de-stemming process without crushing, macerated in stainless steel tanks with temperature control and long fermentations with whole grains, extracting the varietal aromas intracellularly. The musts were pumped over naturally by gravity, using the submerged hat as a production aid. Finally, the wine was extracted using a pneumatic press, then transferred to French oak barrels where it underwent malolactic fermentation. This wine aged in oak barrels of the same origin for 14 months.
