Description

Le Cotet Blanc de Blancs Extra Brut is an organic Champagne made by the Jacques Lassaigne estate from Chardonnay in the Champagne AOP.
This natural Champagne, made by Emmanuel Lassaigne, comes from a small vineyard in Montgueux planted on a chalk hill. No pesticides, fertilisers or synthetics are used. Yields are limited to 60 hl/ha and the grapes are hand-picked.

At harvest, the grapes are gently taken to the cellar, where they are pressed and the must is fermented in a stainless-steel tank. The second fermentation takes place in bottle, which is kept for 24 months.

Mineral notes, very crisp, with a lemony finish. A wonderful companion for oysters, seafood and other shellfish.
