Description
Domaine Jean-Louis Chave is the great reference of the Hermitage hill, and the Chave family has been growing vines since 1481. The white Hermitage is mainly old-vine Marsanne with some Roussanne, from plots such as Péléat, Rocoules and L'Hermite, and is one of France's longest-lived whites. This 2015 vintage is a rare bottle.
In the glass it is luminous gold, with a complex nose of citrus, nuts, honey, beeswax and minerals. The palate has texture, freshness and great tension, with a long, saline finish of great personality.
Serve at 10–12 °C, ideally in a wide glass, with baked fish, shellfish, poultry in creamy sauces or aged cheeses. Its longevity is unusual and it will keep evolving for many years.
