This Pierre Gimonnet & fils, Cuis 1er Cru Blanc de Blancs comes from a mixture of wines from four different harvests and has a unique typicity and freshness: a lively, light and airy Champagne... Made with chardonnay grapes (100%) from 14 hectares in the village of Cuis, classified as Premier Cru. Very short aging on lees (20 months) to maintain the characteristic freshness. The Gimonnet family began cultivating vineyards and producing wines in 1750 in Cuis, but their style was defined from 1955 onwards, when Michel Gimonnet started producing Blanc de Blancs. The style is defined by experts as a nervous, mineral and fresh Champagne. The winery produces champagne only from its vineyards in the Côte de Blancs, the Premier Cru 'Cuis' and the Grand Cru Gramant and Chouilly.
