Producer's notes

ColourFirst look at the colour, then the aroma and then the flavour. We want a golden, translucent spirit, and we can see it best by swirling the glass a little, but not vigorously as with wine.
NoseA complex blend of the finest rum aged for 12 long years, with a nose full of personality, showing fruitcake, rum ice cream, chocolate, dried ginger, cinnamon and clove. Bring the glass up to your nose, but don't breathe in deeply, as we want to pick out the aromas.
PalateThe palate recalls chocolate sauce and sweet toffee, with the tropical fruit flavours from the nose. First take a small sip so the palate gets used to the flavour, and there we detect basic sensations such as sweet, salty and bitter. On the second sip, leave it in the mouth for a while.
