The decision to select only this variety represents the objective of prioritizing quality over profitability. A variety that was disappearing due to its low production, it is ideal for aging in barrels and from which more fruity, elegant and smooth wines are obtained.

With this, Guillermo and his sons managed to obtain a special wine, as it is a unique farm, a unique grape variety and a unique winery.

Guillermo Eguren planted 18 hectares of Tempranillo Peludo at Finca de La Canoca, in the foothills of the Sierra de Cantabria, on an alkaline calcareous clay soil with a balanced proportion of organic matter.

The vines are planted using trellis training and have a low yield of one kilo per vine.

The harvest is manual, placing the bunches in boxes. Then, upon arrival at the winery reception, a selection is made on the selection tables to keep the bunches in optimal health and maturation conditions.

The must is transferred to French oak barrels where alcoholic fermentation takes place, and from there to new barrels (with 10% American oak) for malolactic fermentation. It then ages in barrels for around 20 months, with racking every 4-5 months. It then remains in the bottle for a year before being released onto the market.
