After working at the Priory of Daphne Glorian (Clos Erasmus) and Álvaro Palacios and spending some years working in France, Burgundy (at Domaine de la Romanée Conti and Comte Armand) and in the Northern Dano River Valley, Domaine Combier, Verónica Ortega returned to Spain to carry out her own project, specifically in the Bierzo region.
In some places, such as Bierzo, old vines have been preserved and the Mencía variety is one of the favorite grapes of this winemaker from Cadiz. The steps to start a major project were taken in this area of León, and this adds to Verónica's vast experience.
Their wines are artisanal, with spontaneous fermentation and low sulphur content. Like the vineyard, they work manually following the principles of organic farming. The plots where they produce their wines are mainly old Mencía vines, but as is common in Bierzo, there is a very small proportion of local varieties, both white and red, mixed in the vineyard, from Alicante Bouchet, Merención and Jerez.
