In summer 1886 William Grant began building his distillery in Dufftown, Speyside, by hand, stone by stone, helped by his seven sons and two daughters. He named it Glenfiddich — Gaelic for 'Valley of the Deer' — and the first spirit ran from the stills on Christmas Day 1887. It remains one of the few single malt distilleries that is entirely family owned.

Single malt: whiskey made only from malted barley at a single distillery. For Scotch it must be distilled in copper pot stills.
Copper pot still: batch distillation, usually two or three times; it tends to keep more body and aroma than a continuous column still.

% ABV is alcohol by volume. In the European Union the legal minimum is 40% for whiskey and 37.5% for gin, rum and vodka. Cask strength means bottled at the cask's natural strength, without dilution. A few drops of water can open up the aromas.

A 700 ml bottle gives about 17 measures of 4 cl. Once opened, store it upright, tightly closed and away from light and heat: spirits keep well for months but slowly lose aroma once the bottle is half empty.

What age and cask tell you
12 years
The youngest whiskey in this bottle spent at least 12 years in cask.
In general: Younger: lively and fruity. 15–18 years: rounder and more complex. 21+: deep, with plenty of oak and dried fruit.
How to taste like a pro
At room temperature, to meet the whiskey as it left the cask.
2–3 drops of still water open up hidden aromas, especially above 43%.
One large cube chills with less dilution; it softens but closes some aromas.
