The age on the label is that of the youngest whiskey in the blend: every component spent at least 12 years in cask. Only time in wood counts — once bottled, whiskey does not age.

The cask the spirit matured in gives colour, aroma and texture. Many houses use casks that previously held another drink:
• Ex-bourbon: American oak that first aged bourbon (US law requires new casks for bourbon, so many are available second-hand); they tend to give vanilla, coconut and caramel.
A finish is a final period of maturation in a second cask.

A 700 ml bottle gives about 17 measures of 4 cl. Once opened, store it upright, tightly closed and away from light and heat: spirits keep well for months but slowly lose aroma once the bottle is half empty.

Description
The Isle of Jura, Islay’s neighbour, has around two hundred inhabitants, thousands of deer and a single distillery, founded in 1810. Jura 12 Year Old matures in American bourbon casks and is finished in oloroso sherry casks, with a light touch of smoke, in a sweet, approachable style.
Matured for 12 years in bourbon casks and oloroso sherry casks and bottled at 40%, it shows dark chocolate, orange, vanilla and peat smoke on the nose. The palate is silky, with toffee, orange, coffee and cinnamon. The finish is medium, with dark chocolate, peat smoke and spice.
Balanced and complex, it works as well for a relaxed evening as for a special dinner. Serve neat or with a drop of water. It pairs with roast meats, mushrooms, nuts and hard cheeses.
