In the village of Bushmills, County Antrim, on Ireland's north coast, whiskey has been made since the area was granted a royal licence to distil in 1608 — Bushmills calls itself the world's oldest licensed whiskey distillery. Water is drawn from the River Bush and its single malt is still triple distilled from 100% malted barley in copper pot stills.

Copper pot still: batch distillation, usually two or three times; it tends to keep more body and aroma than a continuous column still.

A 700 ml bottle gives about 17 measures of 4 cl. Once opened, store it upright, tightly closed and away from light and heat: spirits keep well for months but slowly lose aroma once the bottle is half empty.

2–3 drops of still water open up hidden aromas, especially above 43%.
One large cube chills with less dilution; it softens but closes some aromas.
