The winery controls daily more than 100 hectares of old vines with old clones of Tinto Fino (a Tempranillo grape variety that has adapted over two years to the physical and climatic conditions of the Ribera del Duero) distributed in 7 different municipalities in the province of Burgos, and 20 hectares of young Tinto Fino vineyards located in 2 municipalities in the province of Valladolid. They all belong to the Ribera del Duero designation of origin and the age of the vines varies between 40 and 100 years.
The grapes from each of the two municipalities are treated independently: they are harvested separately and this separation is maintained during the winemaking process and also during aging in barrels.
Mariano García, as winemaker at Aalto, decides when to coupage each two batches and when he considers they are reaching their ideal level of aging. Later, he would fill up all the wines to drink the entire harvest at once. Out of curiosity, Aalto wines are not clarified or filtered to preserve all their original characteristics.
In May 2018, it was published after Javier Zaccagnini left the Aalto project to dedicate himself exclusively to his personal project, also developed in Ribera del Duero.
