Baynos is the arrival of Bodegas Mauro in Rioja. Baynos aims to be the expression of the soils of Baños de Ebro, where the soils are poor and rich in clay, and where they have small plots. There they have six hectares distributed among nine small plots of Tempranillo, Graciano and the white Viura. They have installed the entire winery in a restored three-storey mansion in the centre of the village and with a network of medieval underground cellars. Baynos 2020 is 90% Tempranillo and 10% Graciano from organic and biodynamic vineyards in the process of obtaining ecological certification. The destemmed and uncrushed grapes were fermented in concrete with native yeasts, where they also underwent malolactic fermentation and the wine was transferred to new and used 228-litre French oak barrels, where it matured for 20 months. Since 1978, Bodegas Mauro has been known for producing quality red wines with a vocation for ageing and limited production. Located in Tudela de Duero, a historic town in the province of Valladolid, 19 km from the capital, in the heart of the Duero Valley. Since 2004, Eduardo Garcia, son of the legendary winemaker Mario García, has been the winery's technical director and viticulturist.
