A batch of three white varieties from Dão, each with its own personality! Encruzado, the majority, provides volume and complexity, as well as the freshness associated with its more vegetal aromatic component, while Gouveio reinforces this freshness and definitely contributes to harmonizing the aftertaste and its persistence. Bical seems to unite all these attributes, thus reinforcing the great delicacy of the set, where the subtle notes of the oak wood where it aged are very well integrated. VINIFICATION Manual harvest into 15 kg boxes.

On the nose, in addition to lime, pineapple and stone fruit, there are spicy notes reminiscent of cardamom and honeyed, buttery and resinous nuances. Unctuous without losing its juiciness, it shows itself at a great level in the mouth test, with excellent breadth and texture. Finishes long, expressive and juicy.

Winemaking : separate from the different grape varieties Manual selection on a sorting mat. After de-stemming and crushing, the resulting masses were sent to a pneumatic press where the must was separated from the skins, with the must subjected to static decantation at low temperature for 48 hours for clarification. Fermented in stainless steel tanks at a controlled temperature, aged for around 18 months in French oak barrels, new (80%) and used (20%).
