Description

Caol Ila sits in a cove on the north-east coast of Islay, overlooking the sound between the island and Jura that gives it its name. It is the island’s largest distillery and an essential source of smoky malt for many blends. Moch, Gaelic for dawn, is a fresh, bright version without an age statement.

Matured in bourbon casks and refill casks and bottled at 43%, it shows peat smoke, lemon, sea salt and fresh grass on the nose. The palate is light and fresh, with peat smoke, honey, pear and sea salt. The finish is medium, with peat smoke, sea salt and pepper.

For lovers of smoke, it is an essential bottle. Drink it neat or with a drop of water, which reveals the sweetness hidden behind the peat. It pairs with oysters, smoked salmon, grilled meats and blue cheese.
