• Ex-bourbon: American oak that first aged bourbon (US law requires new casks for bourbon, so many are available second-hand); they tend to give vanilla, coconut and caramel.
A finish is a final period of maturation in a second cask.

A 700 ml bottle gives about 17 measures of 4 cl. Once opened, store it upright, tightly closed and away from light and heat: spirits keep well for months but slowly lose aroma once the bottle is half empty.

Description
Paul John is one of the pioneers of Indian single malt, with its distillery in Goa on India’s west coast. Six-row barley grown in the Himalayan foothills and a tropical climate that speeds maturation produce rich, exuberant whiskies. Brilliance is bottled at 46%, unpeated and non-chill filtered.
Matured in bourbon casks and bottled at 46%, it shows honey, tropical fruit, vanilla and cinnamon on the nose. The palate is creamy, with honey, toffee, pepper and coconut. The finish is medium, with spice, honey and oak.
Balanced and complex, it works as well for a relaxed evening as for a special dinner. Serve neat or with a drop of water. It pairs with roast meats, mushrooms, nuts and hard cheeses.
